A Japanese-style, root-veg beef soup that slow-finishes in your thermos, so it’s piping hot when you break for lunch.

For a 12 oz (0.36 L) Zojirushi Stainless Steel Food Jar

  • 1 tsp vegetable oil
  • 115 g beef stew meat, bite-size pieces
  • ¼ cup onion, cubed
  • ¼ cup carrot, peeled & cubed
  • ½ cup daikon radish, cubed
  • 240 ml beef stock
  • ½ tsp caster sugar
  • ½ tsp soy sauce

For a 17 oz (0.5 L) Zojirushi Stainless Steel Food Jar

  • 1 ½ tsp vegetable oil
  • 170 g beef stew meat, bite-size pieces
  • ā…“ cup onion, cubed
  • ā…“ cup carrot, cubed
  • ā…” cup daikon, cubed
  • 320 ml beef stock
  • ā…” tsp sugar
  • ā…” tsp soy sauce

šŸ² Instructions — step-by-step

Pre-heat the jar


Add boiling water, close the lid and let it stand—essential for truly leak-proof lunch jar recipes.

Sear the beef


Warm the oil in a small saucepan over medium heat. Brown the beef for two minutes; caramelising now layers in depth later.

Sweat the veg


Tip in onion, carrot and daikon; stir for one minute so everything picks up savoury fond.

Build the broth


Pour in beef stock, sugar and soy. Bring to a gentle boil, skim any foam, then simmer 15 minutes.

Thermos time


Empty the hot water, ladle the soup to 1 cm below the inner ridge, fasten the lid and tuck it into your bag. The vacuum insulation will coax the meat tender over the next 3–6 hours—perfect for healthy lunch recipes for thermos fans.

Serve & savour


Season to taste with salt and pepper just before eating. Consume within six hours for peak flavour.

  • Veg swap: Swede or parsnip work nicely if daikon is hard to find.
