*This recipe was developed for 14 oz. and 18 oz. Zojirushi Stainless Steel Food Jars. Adjustments may be required for making this recipe in other Food Jar sizes.

Pre-heat the jar
Fill your jar with boiling water, screw the lid on and set aside. This quick step turns any healthy lunch recipe for thermos success-rate from “warm” to “wow”.
2.Simmer the greens
Tip the edamame, onion and stock into a small pan and bring to the boil without a lid. Bubble gently for about 15 minutes, until the beans are soft enough to squish between your fingers.
3
Toast the extras (while you wait)
Warm the oil in a frying pan over low heat. Add the bread cubes and shuffle them around every minute for roughly five minutes, until gold. Off the heat, shower with parsley and let them crisp up.
4
Whizz & season
Remove the soup from the hob. Using a stick blender (or countertop jug blender) blitz until silky-smooth. Stir in the soy milk, then return to the hob and heat until just shy of boiling. Season boldly with salt and pepper.
5
Jar it up
Empty the hot water, pour the soup in until it sits 1 cm below the inner ridge, and fasten the lid securely. Because Zojirushi jars are leak-proof, your bag stays spotless — one of the best reasons these are my go-to for hot food ideas for kids’ school lunch and office commutes alike.
6
Lunch on the move
Enjoy within six hours. Just before eating, crown each spoonful with those crunchy croutons for contrast.
💡 Tip or Advice
- Mix it up: Swap half the edamame for frozen peas, or add a squeeze of lemon to brighten the flavour.
- Dairy-free but creamy: Oat milk works too, though it sweetens the profile ever so slightly.
- Make-ahead magic: Freeze individual portions; reheat in the morning and decant — ideal for Zojirushi lunch jar meals during exam season.
